For Christmas we have our fancy meal on Christmas Eve so Christmas Day can be relaxing. Tonight, the 23rd of December, due to scheduling conflicts, we are having pork roast smothered in fresh garlic, salt, pepper, and olive oil, mashed potatoes, red cabbage German style, spoon bread (my mother-in-law’s recipe), and mixed veggies. We’ll top it all off with gluten free orange cake with cream cheese icing. I make it from a King Arthur yellow cake mix (some cakes I can’t successfully make GF from scratch), but use fresh orange juice for the liquid and a little orange extract. I’ll ice it with cream cheese icing with orange zest. In between the layers I’ll put canned Mandarin oranges (can’t figure out how to use fresh successfully) and top with the same. I’ll serve it with homemade raspberry coulis and vanilla ice cream. This is my 10 year old grandson’s favorite!
